Chili Con Carne


                This week I created the ultimate chili con carne, meaning chili with meat. It is simmered with all the classical chili ingredients that we know and love. Believe it or not, this was my very first time making a classic stovetop chili and it 100% will not be the last time. It is the perfect meal, one that’s rich and hearty, yet doesn’t skimp on the best ingredients needed to achieve an immaculate flavor. This recipe is a must!


Ingredients

2 TBS extra virgin olive oil

1 lb. ground beef

2 TSP Himalyain salt

1 large onion

2 garlic cloves

1 TBS ground cumin

1 TBS ground coriander

1TBS chili powder

3 TBS julienned sun dried tomatoes

30 oz. diced tomatoes (canned)

30oz. Red kidney beans (canned; rinsed)

1 cinnamon stick



Simply, heat the saucepan over medium and once heated, add oil, beef, and salt. Once browned all nicely, add onions until softened- this took me 10 minutes. Then, toss in your garlic, cinnamon stick, and all dried spices. Stir for a few minutes before adding the sun dried tomatoes- I let them cook for two minutes before combining additional ingredients. Lastly, toss in those tomatoes and beans; you’re going to want to bring to a boil, then simmer for at least 45 minutes. I would recommend tasting it about 15 minutes in to ensure you are satisfied with the flavor, be careful not to be enticed to eat the rest before the 45 minutes are up. Tomatoes 

Tomatoes are rich in potassium, magnesium, chromium, folate, and iron; as well as, tryptophan, an amino acid that benefits your nervous system by improving sleep. Potassium is beneficial for blood pressure control and heart disease prevention. Folate is important for normal tissue growth and cell function. Contained within is a ton of lycopene, which has been shown to reduce the risk of heart disease and cancer. Red Beans 

Red beans are an excellent source of dietary fiber, they contain protein, fiber, iron, and antioxidants that make them beneficial to our organ systems.Beans may help stabilize blood glucose levels or even prevent diabetes. Beans are high in fiber, which can help lower blood glucose. Beans help you control your appetite; When a person eats beans, the fiber and healthful starches they contain can help create a feeling of fullness and satisfaction. Red beans contain all three of the minerals that are key to controlling blood pressure -- calcium, magnesium and potassium.
